Last year our 2 favourite's were Blueberry Muffin & Eton Mess , both of which have been availiable to buy Online over the course of 2011.

Christmas Cake Fudge ... It would be rude not to!

Our lovely Dane in Canterbury here with his first ever batch of Christmas Cake!

This flavour is one of the trickest to make as it is a TRIPLE , yes TRIPLE layer!

First we create a log of Boozy Fruit and Nut packed with walnuts, rum and raisins , then we fold over a sweet Almond layer on top . Once this has set , we carefully top the whole batch with a layer of cool and creamy Vanilla...
Just pop the kettle on , make a cuppa - & you have the perfect Festive Treat.......

I will say at this point that there is nothing on earth quite like the mesmeric movement of fudge on a slab when it is cooling. It is simply beautiful. The people precticing their folding and gathering art were brilliant to watch and schooled the gathering crowd as they worked.

Fudge as a product sometimes has the consumption pleasure of a vanilla flavoured building block. Fudge Kitchen fudge is a creamy and joyful opposite.

Mine is easy, and I don't even have to think about it. It was sports day, and I was in Primary school! All the children were in the teams one side of the track, and all the parents in their seats the other side of the track including my mum... and dad. There must have been about 500 people there! Well I had, had a cold.. and put some tissue in my shorts as I had no where else to keep them! Well one tissue had slipped down, and was poking out of my shorts!!! My dad shouts... "GEMMA.... GEMMA..... " so i look at him, he then shouts and I cringe typing this.... "Your sanitary towel is falling out". i had never been so mortified in all my llife. My Mum smacked him and everyone laughed at me!!!! I was only 10!!!

Below's a picture of the Canterbury Manager looking rather menacing in what can only be described as an improvement to his face (not really he is a very handsome young man). To the right, the Manager of Edinburgh with a very beautiful Owl during their Falconry activity, which I was very envious of!

They have been rather busy of late narrowboating their way through some of England's beautiful rivers talking shop and discussing how they all felt the last year has gone, with some lovely weather (until the last day) and even reinacted The War of The Roses!

It's a tough life sometimes..

We've had a lovely blog entry written about us by The Cheeky Spouse! Here is an excerpt :
"I'll start by saying that this probably the best fudge I've ever had. Previous experiences have found that lesser fudges can be rather chewy, not so with Fudge Kitchen's offerings. As soon as you pop a piece into your mouth it melts into a glorious creamy and silky texture
Each piece of fudge was a sizeable slice, which appeared to have been cut from a vast log. There was Traditional Toffee, Belgian Chocolate Swirl, After Dinner Mint and Rich Chocolate Orange. The accompanying booklet with its enticing pictures and copper-inked type certainly gives an overall feeling of opulence, which I later found to be highly appropriate."

Venturing out of Fudge HQ for Valentines Day, i went on a visit to our beautiful Windsor shop.

Basking in the sunshine in at the bottom of Thames Street opposite Windsor Castle, our Windsor team had a romantic window display of all things Valentines - hearts , roses and delicious fudge love of course!

Matthew and Michelle (all the way from Texas!) arrived at midday for their Fudge Experience, and were greeted by our fabulous Fudge Maker Tania who won the New Year New Flavour competition this year with her sublime Eton Mess.

After the ingredients had been boiled up, poured out and left to set for a little while, Michelle and Matthew had a go at creaming, loafing and slicing fudge the Fudge Kitchen way.
I must say that they were both naturals and their finished batch was nothing short of extraordinary - take a look at this snap of them both - awww......

It's that time of year again when the fudge experts from across the land get busy concocting weird and wonderful new inventions in the hope of creating a new flavour that is produced and retailed in all our Shops and Online.

We have had some inspired ideas (Liquorice, Mulled Wine, Lebkuchen) delicious ideas ( Blueberry Muffin, Sea Salted Caramel, Lime and Coconut) and some down right weird ones (Marmite!).

But Windsor won the crown for their devilishly different offering of Eton Mess!!

A delicous blend of sweet vanilla, with sharp raspberry, a splash of port and of course crushed meringue made this a real winner ! It will be in our shops and on the Website for you all to try very soon.

The police officers were not at all impressed and now the gentleman faces 10 years in prison.

York's Lazy Bones Pumpkin Square

Another wonderfully spooky recipe with Fudge Sauce for you to try.........

For 8 1/2 inch square tin. preheat oven to 200 C and bake for 20-25 minutes:
Tin may require greasing.

Filling

250g of fresh cooked mashed pumpkin
1 egg
1/2 tin of condensed milk (200g)
85g dark brown sugar
1/2 tps mixed spice
1/2 tps ground cinnamon
Pinch salt

Cooking Pumpkin...

Cut into the beast and remove it's innerds (seeds, stringy bits and all)
Chop into cubes and put in a sauce pan and cover with water.
Boil for about 30 minutes until tender, remove from heat and drain thoroughly.

Peel when cool.

Chewy Biscuit Base

8 digestive biscuits
a small cube of butter
4 generous tbs of chocolate or chocolate orange sauce

Crush biscuits into fine crumbs and cream the sauce and butter into them to bind the mixture.
Press the biscuit layer on top of the pastry gently so not to disturb the layer.

Pumpkin filling

Mash the Pumpkin with a potato masher and drain again with a sieve to remove further excess water.
Stir in condensed milk, eggs, sugar and spices. Might be worth blending it with a hand blender.
Pop in the oven for 20-25 minutes.
Insert a knife , if it emerges clean- it is ready to devour!

RECIPE FOR A PETRIFYING PUMPKIN PIE

Our team at Bath have been hunched over their cauldrons concocting this wicked and wonderful recipe: A delicious sweet and moist pumpkin pie made with Fudge Kitchen Toffee and Chocolate Fudge Sauce:

Ingredients:

Pastry- We cheated and bought a sweet short crust pastry case but if you would like to make your pastry a recipe is easily available online.

Filling-
350g of pumpkin flesh cut into 2.5cm chunks
1 large egg plus another yolk
60g soft dark brown sugar
1tsp of cinnamon
1/2 tsp of freshly grated nutmeg
1/2tsp of ground allspice
1/2tsp of ground cloves
1/2tsp of ground ginger
200ml of double cream
½ a jar of Fudge Kitchen Toffee Fudge Sauce
Topping- Fudge Kitchen Chocolate Fudge Sauce

Preparation Method

1. Preheat the oven to 180C/350F/Gas 4.
2. Scoop out pumpkin insides, skin and cut flesh into chunks
3. Steam the pumpkin then drain and press to remove excess water.
4. Blend with the Toffee Fudge Sauce to create a smooth liquid, put to one side.
5. Lightly whisk together the eggs in a large bowl.
6. Mix the sugar, spices and cream in a pan and bring to a simmer, whisking to mix everything together.
7. Pour over the eggs and whisk again, briefly.
8. Add the pumpkin puree, still whisking to combine everything.
9. Now pour the filling into your pastry case and bake for 35-40 minutes so that it is puffy round the edges but a little wobbly in the centre.
10. Leave pie to cool
11. Using the Chocolate Fudge Sauce create your spooky Halloween design on top of the pie, we chose a pumpkin face but you may do anything you like!

So, back at base, we fudgey fanatics have been having a dreadfully tough time drinking hot chocolate fudge. What's that? Discovered by the M.D's kids its heavenly simple. Just whisk 35 grams of our Chocolate or Chocolate & Orange fudge sauce into about 220 ml of hot milk for the PERFECT Hot Chocolate Fudge Drink.

Over the past year there have been numerous changes across the face of the Fudge Kitchen. The name was shortened, the logo simplified, the image remoulded and now the latest installment in our revamp... a shiny new website!

We've added a few products to the online range. Now you can buy all three flavours of our fudge sauce - Classic Toffee, Rich Chocolate and Chocolate & Orange. Quite excitingly, we are now able to offer the "Fudge Experience" where you and a friend or partner can try your hand at fudge making under the tutelage of one of our experts.

Every now and again we get some lovely feedback from you fudge fanatics and I thought I'd share some with you...

I may have said this before, but I'll say it again: thank you so much for your wonderful and glorious dairy-free fudge selection. It is so much appreciated by people like me who often feel a bit miserable when everyone else around us is scoffing piles of chocolate and other dairy-based goodness.

I've been a fan of your fudge for a long time, and started eating it before I went dairy-free (incidentally, the dairy-free tastes just as good as the normal). This is a bit sad, but the Fudge Kitchens I've visited to date include: Cambridge, Oxford, York, Windsor and Edinburgh. Your staff are always such fun (I even saw a comedy show in the Edinburgh shop as part of the fringe!).

I had a box of 6 slices arrive today, and it's so moreish I don't know if it will last the week! (Have tried to be good and freeze 3 slices.) I may put on about a stone and eat my way into a sugar-induced coma, but at least I'll die happy!

In the last week we launched our latest creation, Fudge in a sauce! Forget the runny rubbish you can get from the local supermarket, this is something quite special. Just like our fudge it's smooth, creamy and devilishly different! The first flavour available for you to buy today is our best-selling fudge, Traditional Toffee. Despite the downward trend in internet shopping over the past year, Mother's Day was a roaring success for us thanks to you all. It was a little chaotic with shops being redecorated and boxes being shipped here-there-and-everywhere but I think we got there in the end thankfully. Now comes Easter...!

A Fantastic Result!

AS part of the PR for the opening of the Oxford shop we teamed up with a local charity called Helen & Douglas House which gives respite care to terminally ill children and their parents. They invented a new flavour (Banana and Chocolate) and we sold it in shop to raise money. Since opening we have raised a whopping £900! Well done Dave and team. Here is Leah the fudge's inventor with Dave and our great big cheque!

February is upon us fudgefolk which means the "January Depression" is over HURRAH!!! Fudge sales are picking back up again and soon it shall be Valentine's Day!! Here is a splendid photo of Oxford's wall of boxes in a lovely heart shape. Don't forget, our fudge makes an excellent Valentine's gift and is a welcome and refreshing alternative to chocolates (plus much tastier)! Visit any of our stores and ask about the Valentine's promotion as a gift for that special someone!!
